Weigh Me Wednesday

This past week was a good one (remember that I post about my previous week’s accomplishments, so this is before the holidays).  I lost 2 pounds and only have 2 to go to my ultimate goal.  I had to go shopping for an outfit for my birthday (per my husband’s instructions) and was so happy when I saw size 5.  Oh yeah, I said it.  I haven’t been a 5 since beginning of college which was 11 years ago (wow)!  Stay tuned for how I did over the holidays though.  I worked this past week so that I could enjoy myself over Christmas hehe.

My dad has requested some BBQ Meatballs soon, so I thought with New Year’s coming up, this would be one item that is on the menu.  So, here is a Weight Watcher’s Spicy BBQ Meatball.  They are only 1 point per serving.

Spicy BBQ Meatball

Ingredients
1 1/2 pound(s) uncooked ground turkey breast
1 cup(s) uncooked quick oats
2 large egg white(s)
1 large onion(s), finely chopped
1 clove(s) (medium) garlic clove(s), chopped
1/4 cup(s) parsley, chopped
1 tsp dried oregano
1 1/2 tsp beef bouillon granules
1/2 tsp black pepper
1 1/4 cup(s) barbecue sauce

Directions
Preheat oven to 350ºF. Combine all ingredients, except barbecue sauce, in a medium-size bowl; mix well.

Coat a baking sheet with cooking spray. Shape meatball mixture into sixty 1-inch balls; place on baking sheet.

Bake at 350ºF until cooked through, about 25 minutes. Transfer meatballs to a chafing dish or crockpot to keep warm.

Meanwhile, heat barbecue sauce over medium-high heat until hot. Pour sauce over cooked meatballs, toss gently and serve. Yields 2 meatballs per serving.
