Well, I didn’t lose a single pound this week, but luckily I didn’t gain either. I shamefully admit that I stuffed myself all week long. oops! I couldn’t resist. I also realized I didn’t work as hard as I normally do when I am at home (was at my parent’s all week). At home I run all day long cleaning, getting up and down for the kids, playing with them, etc… I had two extra sets of hands this past week. That goes to show that no matter what the activity is, it’s always great to stay active.
I had a request to share the recipes I use and I am so happy somebody is interested! I stopped doing them because I didn’t think anybody cared. So, ’tis the season and let’s start with a Roasted Turkey Breast:
Ingredients
1 spray(s) cooking spray
1 cup(s) onion(s), red or yellow, sliced
1/2 cup(s) reduced-sodium chicken broth
2 pound(s) turkey breast, a whole roast or breast tenderloin
1/2 tsp table salt, or to taste
1/2 tsp black pepper, freshly ground, or to taste
1/2 cup(s) hoisin sauce
Instructions
Preheat oven to 400ºF. Coat a shallow roasting pan with cooking spray. Arrange onion slices in bottom of prepared pan; pour in broth.
Season turkey all over with salt and pepper; place turkey on top of onion slices in pan. Using the back of a spoon, spread hoisin sauce all over turkey.
Bake until turkey is no longer pink in middle and an instant-read thermometer inserted in middle of turkey reads at least 165ºF, about 35 to 40 minutes. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch-thick slices. Serve turkey slices with roasted onions on top. Yields about 3 ounces of turkey per serving.
